Fish and Veggies

This is a good reminder that you can put it with seriously anything!
Veggies and Fruit!

Chicken Breast, Kale Chips, & Garden Vegetable Quinoa

This was our dinner on Sunday! I was really excited how it all turned out and tasted. I wanted to share the love with you all.

I wanted some chicken that night, but wanted to do something different with it. I just grilled it on our George for a good 5-7 minutes, cut it open down the middle and added some ham slices with some white onion and mozzarella cheese.
I bought this new Quinoa from Winco. It is Garden Vegetable flavored and tasted awesome! It was about $2. A good way to get your protein and fiber in for the day!


This is great way to eat KALE!!!!!! This is a recipe I got from the Weight to Health Class I have been taking.
It's called KALE CHIPS.....
Ingredients:
1 bunch of Kale chopped into small bit size pieces
1 Tablespoon of Olive Oil
Salt and Pepper to taste
Parmesan or Mozzarella Cheese

Directions-
Preheat oven to 350 Degrees
Massage olive oil and salt/pepper into kale
place on baking sheet
bake 10 minutes
sprinkle cheese on baked kale and bake 5 more minutes.
Take out and enjoy!!!!!

My First Herb Garden!!!!!!


I am totally stoked about this post!!!!! I decided to start my first herb garden this year!

I have been taking a class offered through our health insurance for the past 11 weeks. I have learned so much about eating and the importance of healthy foods. I have one class left this coming week, but at our cooking demo last Thursday at the LDS hospital I was inspired to start my own garden!

The thing that made me decide to try it was she just had her little plant on the table while cooking and just snipped a Rosemary leaf off and used it in the recipe! How awesome is that?!?!??!!? Maybe I'm just a goof and such a newlywed like one of my clients says I am. haha BUT  I do hate paying for fresh herbs at the store.

I researched on Pinterest a bit how to accomplish my goal and found some good suggestions! MAN, I love that website. 
I went to TJ MaXX and picked me some cute pots up and made Ryan take me to Walmart for my organic potting soil and seeds.

I decided to plant:
Cilantro, Parsley, Oregano, and Sweet Basil!

I've got them on the porch while the weather is nice so they can get the sun they need! I hope they start to sprout here soon.

You wish you had your own herb garden so you can make some yummy fresh salsa and awesome Italian dishes! huh? jk, but you can start your own if you wanted!


                                 I'm excited to have some fresh herbs!!!!!!

Honey Pork Fry

~Honey Pork Fry~
I am not the biggest fan of pork, but this one was worth posting about.
 This recipe is another one that I made up myself! It turned out very good.

If you take the chance to make it I hope you enjoy it! 

Ingredients
1 lb of pork cubed (I bought mine at the Viva Market on 7200 S.)
1 bell pepper chopped
1/4 C red onion
La Choy Soy sauce- few dashes ( I use this because it's Gluten Free)
1/4 C- 1/2 C Honey 
Salt and pepper

Cook the pork alone in crock pot on high for 30 or so minutes, it cooks pretty quick, add other ingredients listed above. Cook another 20-30 min on low-just enough for bell peppers to soften a bit and the meat to absorb the other flavors.

I emptied all the ingredients in the crock pot to a frying pan to thicken the sauce with some corn starch. I'm sure you can use flour as well.

2 C choice of Rice
&
Fresh or Canned Pineapple-grilled

Make it into a rice bowl or however you would like!

March Visiting Teaching Message Ideas

For the month of March I printed off this cute handout for the women I and my partner visit and teach for St. Patrick's Day!
They really enjoyed them and I do have to say they were super easy and very cute!

Chicken Penne Bake

- eAsY ChIcKeN pEnNe BaKe-

-Ingredients-
1 Box Penne Pasta Cooked
3 C of Cheese -your choice
8-10 sliced mushrooms
1/4 C chopped onion
3 handfuls of fresh spinach leaves
3 Chicken Breasts grilled-sliced or cubed
1.5-2 Cups of Alfredo Sauce
1/2 C of Cottage cheese or Ricotta
Salt and pepper to taste

Mixed all ingredients together and place in baking dish covered w/aluminum foil.
Bake in oven on 375 degrees for 25-30 minutes.

All of my ingredients and directions are estimates. Most the time I never measure anything.
So, IF you want more of one thing, go ahead and do it!
